Baked Goat Cheese
If you like goat cheese, these are a treat.
Fresh goat cheese
Cut up goat cheese into 1/2" thick slices, wedges, or large chunks. (If the cheese is very soft, you may place it in the freezer for fifteen minutes to firm up before you cut it.)
Olive oil, enought to cover cheese, around 2 cups per pound
Basil, thyme, rosemary
Garlic, crushed red pepper, black pepper
Mix oil and herbs well, and pour over the goat cheese slices. Leave to marinate for at least a few minutes, or as long as a few days.
(Lightly toast bread, then put in through a food processor until fine. May be frozen either as bread, toast, or crumbs.)
Heat oven to 350-400.
Baking tray or sheet pan.
Remove cheese pieces from marinade, making sure they're oiled all over, and roll them in the bread crumbs to cover.
Places cheeses on a baking tray, an inch or two apart.
Bake for 5-10 minutes, until cheese is melting and crumbs are toasted.
Remove cheeses from tray and place on salad or toast slices.
