Banana Bread

Preheat oven to 350 deg. F.

A large muffin tin, loaf pan, or equivalent

Prepare bakeware as appropriate, eg, by preheating cast iron pans, or buttering tin pans.

A medium mixing bowl, a whisk and/or a flour sifter

Flour, 2 cups

Brown sugar, 3/4 cup

Baking soda, 3/4 teaspoon

Salt, 1/2 teaspoon

Sift and/or whisk the dry ingredients together.

A medium-sized mixing bowl and a whisk or fork

Eggs, 2

Beat the eggs together.

Butter, 6 tablesppons, melted

Sour cream, 1/4 cup

Optional seasonings: Vanilla extract, 1 teaspoon; or other "sweet" spices

Beat the butter and sour cream into the eggs.

Bananas, preferably overripe, 3

Mash the bananas and fold in to wet ingredients.

Fold the wet ingredients into the dry ingredients and mix until just combined.

Optional additions: blueberries, grated apple, or other fruit, 1/2 to 1 cup

Transfer batter to baking dishes and place in the oven.
To fill muffin pans, look for an appropriately-sized ice-cream scoop or similar kitchen implement that will let you quickly scoop out a similar amount of batter and scrape it off into each cup.

Bake in medium oven (350 deg. F) for 25-30 minutes for muffins, or around 45 minutes for larger loaves.
