Flavored Latte: - Flavored syrup into cup - Shot of espresso into cup x Stir together - Steamed milk for Latte Mocha: - Chocolate syrup or very strong hot chocolate - Shot of espresso x Add chocolate to cup, then espresso, and stir together - Steamed milk for Latte x Pour milk Steamed milk for Latte: x Home espresso machine. x Small pitcher, either stainless steel or glass, triple size of milk x Small thermometer o Cold Milk - Set machine for steam, wait for machine to be ready, clear wand of fluid. - Place wand under surface, start steam. - Raise wand to surface and keep air-intake valve just at/below surface, "stretching" the milk by increasing its volume. - When temperature reaches 100-110 degrees F, or when it's grown enough, it's time to stop foaming and start blending (or "rolling"). - Place wand deeper into milk again and angle the container so that the contents whirl around inside the container, mixing together. - When the temperature reaches 150 degrees F, it's time to turn off the steam. - Remove the pitcher from the wand and tap against the counter to break any larger bubbles. > Should increase volume by around half, and have smooth blend of tiny bubbles throughout.
